- 2/3 cup quinoa, cooked
- 3 cups spinach
- basil
- 1 clove garlic, minced
- 2 tablespoons pine nuts
- 1/2 lemon, juiced
- salt and pepper
- Warm up premade quinoa over medium heat.
- Add basil, garlic, salt, pepper, and pine nuts.
- Add spinach and stir until warm and soft.
- Serve with a squeeze of lemon on top and a drizzle of olive oil if desired.
