Pesto Quinoa Bowl

  • 2/3 cup quinoa, cooked
  • 3 cups spinach
  • basil
  • 1 clove garlic, minced
  • 2 tablespoons pine nuts
  • 1/2 lemon, juiced
  • salt and pepper
  1. Warm up premade quinoa over medium heat.
  2. Add basil, garlic, salt, pepper, and pine nuts.
  3. Add spinach and stir until warm and soft.
  4. Serve with a squeeze of lemon on top and a drizzle of olive oil if desired.
