- 1/2 cup chickpeas, drained
- 1 tablespoon olive oil
- 1 lemon, squeezed
- 1/2 teaspoon freshly ground black pepper
- 2 cups spinach leaves
- Put the drained chickpeas into a large mixing bowl.
- Combine the remaining ingredients with the chickpeas and stir well.
- Chill before serving.
