Sweet Potato Souffle

potato mixture:

  • 6 large sweet potatoes, peeled
  • 1 cup sugar
  • 1/2 cup milk
  • 1 cup butter, melted
  • 1 tsp. vanilla
  • 1 egg

topping mixture:

  • 1 cup brown sugar
  • 1/3 cup all purpose flour
  • 1 cup butter, melted
  • 1 1/2 cups chopped pecans

  1. Boil sweet potatoes until tender.
  2. Preheat oven to 350 degrees and grease casserole dish.
  3. Mix potatoes until smooth.
  4. Once smooth, add, sugar, milk, butter, vanilla, (salt to taste), and egg until desired consistency is reached.
  5. Pour mixture into casserole dish.
  6. Whisk brown sugar, flour, butter and pecans together.
  7. Spread mixture over potatoes.
  8. Bake for 45 minutes.
