Zucchini Salad w/ Shrimp & Feta

  • 1 tsp olive oil
  • 1 /2 tsp lemon zest
  • 1 1/4 tsp fresh lemon juice
  • 1/8 tsp minced garlic
  • 2 ounces cooked shrimp
  • 1 small uncooked zucchini, sliced very thinly into ribbons
  • 1 tbsp crumbled feta cheese
  • 1 tbsp fresh parsley, chopped

  1. Combine oil, lemon juice, lemon zest, and garlic in a small bowl.
  2. Add shrimp and zucchini; toss to coat.
  3. Season to taste with salt and pepper.
  4. If desired, garnish with feta and parsley.
