- 1 tsp olive oil
- 1 /2 tsp lemon zest
- 1 1/4 tsp fresh lemon juice
- 1/8 tsp minced garlic
- 2 ounces cooked shrimp
- 1 small uncooked zucchini, sliced very thinly into ribbons
- 1 tbsp crumbled feta cheese
- 1 tbsp fresh parsley, chopped

Combine oil, lemon juice, lemon zest, and garlic in a small bowl.
- Add shrimp and zucchini; toss to coat.
- Season to taste with salt and pepper.
- If desired, garnish with feta and parsley.
