- 4 ounces tempeh, sliced OR veggie patties/crumbles
- 1/2 lime, juiced
- 2 tablespoons white rice vinegar
- 1 tablespoon cilantro, finely chopped
- 1 cup spinach
mango salsa
- 1/2 ripe mango, sliced
- 3 tablespoons onions, diced
- 3 tablespoons green peppers, diced
- 3 tablespoons cilantro, chopped
- 1 lemon, squeezed
- Marinate tempeh in lime juice, vinegar, and cilantro. You may saute in pan on medium heat for three minutes with olive oil spray.
- Mix together salsa ingredients and lay over sliced tempeh.
- Serve over spinach.
