Tempting Mango Tempeh

  • 4 ounces tempeh, sliced OR veggie patties/crumbles
  • 1/2 lime, juiced
  • 2 tablespoons white rice vinegar
  • 1 tablespoon cilantro, finely chopped
  • 1 cup spinach

mango salsa

  • 1/2 ripe mango, sliced
  • 3 tablespoons onions, diced
  • 3 tablespoons green peppers, diced
  • 3 tablespoons cilantro, chopped
  • 1 lemon, squeezed
  1. Marinate tempeh in lime juice, vinegar, and cilantro. You may saute in pan on medium heat for three minutes with olive oil spray.
  2. Mix together salsa ingredients and lay over sliced tempeh.
  3. Serve over spinach.
