adapted from recipe by Joanna Tennison
- 1/2 avocado, diced
- 1/3 cup mango, diced
- 1/3 cup cherry tomatoes, chopped
- 1 shallot, diced
- 1/4 cup cilantro, chopped
- juice of 1/2 lemon
- salt and pepper, to taste
- Mix all ingredients together and refrigerate for a few hours to allow flavors to meld.
