Black Bean & Quinoa Chili

  • 2.5 cups black beans, rinsed
  • 0.5 cup quinoa
  • 1.5 cups vegetable stock
  • 1 cup water
  • 3 cups diced tomatoes
  • 1 tbsp fresh cilantro, chopped
  • 1 green pepper, chopped
  • 1 medium onion, chopped
  • 2 tbsp chili powder
  • 1 tsp cumin powder
  • 1 tsp onion powder
  • salt and pepper, to taste
  • 1 avocado, sliced

1. Place all ingredients in a large pot. Turn heat to medium/high and bring to a rolling boil.

2. Cover and let simmer on low for about an hour.

3. Serve with diced green onions and avocado.
