Lemon, Spinach & Chickpea Salad

  • 1/2 cup chickpeas, drained
  • 1 tablespoon olive oil
  • 1 lemon, squeezed
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups spinach leaves

  1. Put the drained chickpeas into a large mixing bowl.
  2. Combine the remaining ingredients with the chickpeas and stir well.
  3. Chill before serving.
