Tuna Salad [Mayo-Free]

  • one 2-3 ounce package of tuna
  • 1/2 cup onion, diced
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 1/4 cup parsley, chopped
  • 1/2 avocado, diced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1/2 cup bell pepper, chopped
  • 1/4 cup tomato, diced [optional]
  1. Mix all ingredients together and enjoy as is or over a bed of leafy greens. If not serving right away, add avocado just before eating.
