Apple Cider Vinegar Cole Slaw

  • one bag shredded cabbage
  • one green apple, cored and diced
  • one green bell pepper, diced
  • one yellow bell pepper, diced
  • one cup shredded carrots
  • one cup pineapple, diced
  • half of a red onion, diced
  • one zucchini, spiralized and chopped
  • one cup apple cider vinegar
  • one or two packets of stevia, to taste

Mix all ingredients together and serve immediately or let flavors meld in the refrigerator for a few hour before serving. Lasts for up to a week when stored in an air tight container in the refrigerator.
