Cauliflower Rice

  • 1 head cauliflower, chopped
  • extra virgin olive oil
  • salt and pepper
  1. Put the cauliflower in a food processor and chop until the pieces are roughly the size of rice grains.
  2. Place a tablespoon of olive oil in a skillet over medium-high heat and add the cauliflower after the oil is hot.
  3. Add a pinch of salt and pepper and cook for 5-10 minutes or until soft.
